Low Carb/ Keto Tonkatsu with sauce! Airfryer. Freezable.

I love to have frozen tonkatsu on hand because it is a convenient to throw in the air fryer when you don't have anything to eat.


Just serve with a cabbage salad and it is the perfect keto/ low carb meal!




Because the ingredients are low carb, it is difficult to fry as the breading falls apart.\

I would recommend cooking in an air fryer or oven.

Spraying the tonkatsu with an olive oil spray or avocado spray will help brown and crisp up the tonkatsu.

Ingredients

sauce:

  • water 1 cup
  • heavy cream 1 cup
  • liquid aminos 3T + 1t
  • No sugar ketchup 3T + 1t
  • Lakanto Monk Fruit Sweetener 3T
  • Apple cider vinegar 2T
  • coconut aminos 1T
  • xanthan gum 1/2t

tonkatsu: 

  • Almond flour (1 bowl with 1/2 cup and one bowl with 3/4 cup)
  • Parmesan Cheese 3/4 cup 
  • black pepper
  • 2 eggs
  • Heavy cream 1T
  • Pork Loins about 475g or 6 thin slices of pork loin a little bigger than palm size
  • salt

Direction

  1. Bring all of the sauce ingredient except xanthan gum to a boil in a pot on medium heat
  2. Lower heat to low and simmer for about 10 minutes
  3. Add in xanthan gum. Make sure to whisk all of the clumps,
  4. Simmer for an additional 5 minutes
  5. Once it thickens, cool then place in container. Note: It will thicken further once cooled!
  6. Cut the pork chops into 1cm thickness if needed
  7. Place parchment paper over the thin pork chops and pound with a meat tenderizer or a heavy stick.
  8. Season both sides of the pork with salt. Let it sit for 10 minutes 
  9. Set 3 bowls. In the first bowl, put 1/2 cup of almond flour. Second bowl, crack 2 eggs and whisk it with the heavy cream. In the third bowl, mix 3/4 cup of almond flour with 3/4 cup of parmesan cheese and a little bit of black pepper. NOTE: If you are not going to be making/using the sauce, I would recommend putting a little bit of salt in the final breading!
  10. Place pork chops in the first bowl and evenly coat with almond flour. 
  11. Then place in egg wash and evenly coat.
  12. Then place in the breading and evenly coat. 
  13. Continue until all pork chops are breaded. 
  14. Tip: Try to use one hand for dry ingredients and one hand for wet ingredients.
  15. Put parchment paper in the air fryer and then put in pork chops.
  16. Do not overlap!
  17. Cook at 380F for 15-20 minutes. Flip after 8 minutes and check on it 5 minutes after that. 
  18. You can freeze the ones you do not cook. When cooking the frozen tonkatsu, cook in airfryer at 400F for 15-20 minutes flipping halfway.
  19.  You can also freeze the sauce. Just let it thaw on the countertop until ready to eat.
