Low Carb/ keto kimchi cream pork chops

I made a very simple recipe for creamy pork chops with a twist!

I used Kimchi to make it into a korean fusion dish.




I love kimchi cream pasta so I thought I would make it with pork chops because I bought a lot of it from costco.




For those of you that do not like very creamy sauces, try this recipe.

The kimchi really helps with the creaminess.













Ingredients:

Pork Loin 475g or 2 of the costco packaged pork loins

Kimchi 140g

Juice from kimchi 3T

Mozzerella Cheese 40g

Parmasian Cheese 20g

Salt and pepper to taste

Minced garlic 1T

Red pepper powder 1T

Heavy Cream 1 cup

1/2t sea salt


optional Konjac(shirataki) noodles 200g

Directions:

1) Cut kimchi into bite size pieces

2) Cut pork chops in half if it is too thick

3) Season with salt and pepper on both sizes

4) Heat a skillet with enough oil to cover the bottom of the pan.

5) Once oil is heated, add the pork chops and cook on med-low heat

6) Once browned, flip over and cook the other size until browned

7) Once done, take pork chops out of the pan 

8) If there is a lot of oil left, pour some out. Only need about 1 T of oil left in the pan. If there is not enough oil left, add a little bit more oil.

9) Stir fry the kimchi for 30 seconds to 1 minute

10) Add in the minced garlic and red pepper powder and stir

11) Cook for about 1-2 minutes until kimchi is cooked

12) Add in the kimchi juice and mix around for 30 seconds then add in heavy cream

13) Bring it to a boil (should be quick) add in 1/2t sea salt and pepper to taste

14) Then add in the pork chops.

15) Use a spoon to splash some of the cream mixture on the top of the pork chops

16) Cook for about 3-4 minutes then flip and cook for about 3-4 minutes. Give it a taste. If it is too bland add more kimchi juice or salt. If it is too salty add a little more cream.

17) I added konjac noodles at this time because I wanted it to be a cream pasta but you can skip it and eat it with a salad.

18) Add in the cheese. You can mix the cheese in with the sauce or just sprinkle it on top so it can melt.

19) Once cheese is melted, it is ready to eat.
