Easy Low carb Kimchi Bacon Cheese "Fries"

Hey everyone!





I made a low carb kimchi bacon cheese fries using jicama as the "fry".






Jicama can be eaten in moderation on a low carb diet due to its high fiber.

Give it a try with your favorite nacho cheese. I used Trader Joe's vegan cashew cheese because I love the flavor of it and its surprisingly 0 carbs.**


**They made a faulty packaging so now the packaging reflects the true carb count. It is not 0 :(










Ingredients:

427g jicama (about 1/2)

salt

garlic powder

parsley

low carb cheese

kimchi

bacon

jalapeno(optional)

oil

1) Cut skin off jicama

2) Slice thinly into thin fry shape

3) Boil water with 1/2 T of salt

4) Once boiling add sliced jicama and boil for 10 minutes

5) Drain and place jicama into a bowl

6) Massage 1 T oil, 1/2 teaspoon of salt, 1/2 teaspoon of garlic powder, 1/2 teaspoon of parsley

7) Place onto a cast iron skillet

8) Preheat oven to 425 F and cook for 30 minutes stirring every 10 minutes to brown evenly

9) Meanwhile, squeeze excess liquid from kimchi. I used about 3/4 cup.

10) Dice kimchi

11) Cook bacon in a pan.

12) Once done, remove and cook kimchi in the bacon grease

13) Finely dice jalapeno if using

14) Once jicama is done, take out of oven and pour/spread cheese

15) Then spread kimchi, bacon and jalapeno and pop it back in the oven for a couple minutes until the cheese is thoroughly warmed
