Low carb/ keto pizza; freezable keto meal

Hi everyone!




I'm sure this applies to everyone but some days I don't want to cook and just want to grab a frozen dish out of the freezer and just serve dinner!


After eating low carb/keto, it has been difficult to do that and I hate to admit it but sometime I just end up getting something delivered that is not keto friendly!





So, I decided to make a couple recipes that can be frozen and heated when ready to eat!

Some will be asian inspired and others will not.





For today, I brought you guys a pizza recipe.

Now, this is a recipe that is adapted from Carine's recipe.

Check out her recipe if you are low carb and vegan!














Ingredients

1/2 cup + 2 T coconut flour

2T ground psyllium husk

1/2t salt

1/4t erythritol

2T olive oil

1 cup lukewarm water

1 cup mozzarella

1.5t italian seasoning

1t garlic powder (not shown in video but would be a great addition)

Instructions

1) Put all dry ingredients into a bowl.

2) add olive oil and 1 cup of water slowly while stirring

3) Stir with spoon until well mixed then knead the dough with your hands

4) Once it becomes a uniform ball, place a wet paper towel over it and let it rest for 10 minutes

5) Meanwhile, preheat oven to 425F.

6) After 10 minutes, cut dough in half and knead a couple times.

7) Flatten dough into about 1/4 inch

8) use a small pot lid to make into a circular shape

9) Continue steps 7 and 8 until all dough is used up. (I got around 4 small pizza)

10) Place in preheated oven for 15 minutes or until toasted

11) Take out and put toppings. (I used pizza sauce, mozzarella cheese, pepperoni, mushrooms, olives, onion and bell pepper)

12) If you want to freeze it, wrap it in parchment paper and then saran wrap and place in freezer ziplock bag.

13) Once you're ready to eat it, preheat oven to 425F and bake for 10-15 minutes.
