Low carb ketogenic shrimp pad thai

I hope you enjoy this low carb pad thai recipe.




You can switch out the shrimp for a higher fat meat to make it more keto friendly.














ingredients:

red bell pepper 57g or 1/2 bell pepper

cilantro 17g

shrimp 6 pieces

mung bean sprouts 75g

peanuts

carrot strips 13g or 1 baby carrot

2 eggs

bok choy 150g

minced garlic 1t

miracle noodles/konjac noodle 1 packet



sauce:

3T fish sauce

1T coconut aminos

2.5T erythritol

1T calamansi juice or lime juice

1T sriracha

1T tomato paste

1) mix all sauce ingredients

2) drain and wash 1 packet of konjac noodles

3) add 1.5T of sauce to noodles and let it marinate for 1 hour

4) meanwhile, cut all veggies and scramble 2 eggs 

5) peel shrimp and marinate with salt, pepper and chili flakes if you like spicy flavor

6) Heat 1T of oil in a wok and cook shrimp and 1t garlic for 1-2 minutes

7) Add bell pepper and carrots and saute for 1-2 minutes

8) push veggies and shrimp to the side of the wok and add in scrambled eggs and scramble it.

9) once egg is almost all cooked, mix with the rest of the ingredients in the wok

10) Add noodles, rest of sauce and rest of veggies and stir

11) Once veggies are almost cooked, add in some crushed peanuts

12) Once veggies are done cooking, top dish with cilantro and additional crushed peanuts
